Sloppy Joes:
This sandwich was actually quite good and not very sloppy at all. It had a few veggies in it, ground turkey, and all on a whole wheat bun (that had none of the hydrogenated corn syrup stuff in it). I would definitely recommend this. I made it for dinner, but I'd probably suggest it as more of a lunch item.
Ingredients:
- 1/2 small yellow onion (15cal)
- 1/2 carrot (15cal)
- 1/4 green pepper (10cal)
- 4oz canned tomato sauce (35cal)
- 8oz crushed whole tomatoes,canned (65cal)
- 1/2c canned mushrooms (15cal)
- 1/2lb ground turkey (340cal)
- 3T bbq sauce (75cal)
- 1T vegetable oil
- pepper to taste
- 4 whole wheat buns
Directions:
- finely chop onion, green pepper, carrot and mushrooms
- add oil to pan and heat
- saute for about 5min the ground turkey, onion, green pepper and carrot
- add tomato sauce, crushed tomatoes, bbq sauce, mushrooms and pepper. lower heat and let simmer for about 10min, stirring occasionally
- uncover and cook about 3min, stirring occasionally
- remove from heat and let cool about 2min
- place about 1/4 of mix on a whole wheat bun, enjoy!
Fritatta:
This dish was pretty simple to make and tasted pretty good. I think it could have used something else though. Maybe next time I'll buy some spinach and add it in. I'll have to chop it pretty fine though as my bf does NOT like spinach at all. Calories: 700 total. If you cut it into 4 wedges, each would be 175cal. Not bad at all.
Ingredients:
- 3tsp vegetable oil (I just looked up how many tsp are in a tbsp..and 3=1..wonder why the directions didn't just say 1tbsp oil?)
- 2cup Potatoes O'brien w/ red pepper and onions (I bought the Safeway brand)
- 2 Jimmy Dean fully cooked Turkey Sausage patties, shredded/chopped (I just popped em in the microwave for a little bit so that they weren't hot, but soft enough for me to squish apart with my fingers so that they were in little pieces, sort of resembling ground beef)
- 4 eggs, stirred
Directions:
- Move oven rack about 6in away from heating element and then preheat Broiler. If skillet does not have oven proof handle, cover with foil.
- Heat oil in skillet and slowly add in potatoes and cook until golden brown (about 5 min). If they are browning too fast, turn heat down.
- Add in sausage, and cook 2-3min until browned. (may take a little longer if you previously turned the heat down)
- Remove from heat and pour in pre-stirred eggs and stir lightly to mix ingredients (and I shook the pan just a little bit so that it was more of a circular shape.)
- Return to heat and cook 1 min until edges are set and bottom is light brown.
- Place in oven for 1-2min until center is set.
- Remove from oven and slide onto plate and cut into wedges.
- Enjoy!
